I don't know shit about gaming (in regards to network protocols) but I was under the assumption that all UDP ports need to be open.

I managed to get some things working.
I left wiilink24.com and nwfc.wiinoma.com without changing and simply pointed all in my hosts file to 127.0.0.1.
I managed to connect 2 dolphin instances to the server, added each others friendcode and then started a match.

Unfortunately, shortly after the race starts the connection is disrupted and the following is displayed in the servers console:

I guess it might have to do with dockers way of internally giving ips to containers.
